Ingredients:
- 2 cups of sushi rice
- 2 cups of water
- 1/4 cup of rice vinegar
- 2 tablespoons of sugar
- 1 teaspoon of salt
- 1/2 lb of fresh tuna sashimi
- 1 avocado, sliced
- 1/2 cucumber, sliced
- 1/4 cup of soy sauce
- Wasabi paste
- Pickled ginger
Instructions:
- Rinse the sushi rice in cold water until the water runs clear.
- In a pot, combine the rice and water and bring to a boil. Reduce the heat to low, cover, and simmer for 20 minutes.
- In a small bowl, mix together the rice vinegar, sugar, and salt until the sugar and salt dissolve.
- When the rice is done, transfer it to a large bowl and add the vinegar mixture. Mix gently until the rice is evenly coated.
- Let the rice cool to room temperature.
- On a cutting board, slice the tuna into small, thin pieces.
- To assemble the sushi rolls, place a sheet of nori shiny side down on a sushi mat or piece of plastic wrap.
- Spoon a small amount of rice onto the nori and spread it out in a thin layer, leaving a 1-inch border at the top.
- Add slices of tuna, avocado, and cucumber on top of the rice.
- Roll the sushi tightly, using the mat or plastic wrap to help shape it.
- Repeat with the remaining ingredients.
- Slice the sushi rolls into pieces and serve with soy sauce, wasabi paste, and pickled ginger. Enjoy!
